Hey hey, I too am planning on heading out to Canada, but soon - eep. BUNAC said the visa would come back in 4-6 weeks, and 4 weeks was Wednesday last week so as soon as I get that and I know I can definitely go, I'll book my flights and insurance (no point in squandering money on those to find the High Commission has rejected me!) I too am going to look for a 'whatever' job, just be really open minded at first so I can get settled, have an income that supports paying the bills etc. I have loads of office type experience, call center, admin assistant, receptionist, and I've also done waitressing too (with a tiny bit of that behind the bar)
From the research that I have done, BUNAC say you need at least £500 in savings, though most people have laughed at this amount and suggested more around the £1000-1500 mark (ontop of visas, flights, insurance etc.) but then they add after that, the more money you can take out the better.
If you are planning on relocating twice, you may find that you'll have a period when you first arrive in Toronto where you're spending heaps of money on food, accommodation, travel etc. whilst looking for work and having no income - obviously where a lot of your money will go! If you then plan on moving across to Vancouver after a little while, you'll no doubt go through the same period again but over there - just until you land your self a job! For that reason, I'd say unless you realistically think you can save a decent amount of your Canadian wages, you may need that £3000-3500 to support the second lull in income.
I totally know where you're coming from with the changing your mind thing. I originally looked into this to do during my gapyear between 6th form and uni, but decided against it as at the time it was a 'once in a life time' thing, I'd already spent up to Christmas living and working in Prague... I'd have to wait months before the visa stuff got sorted, and then I was planning on doing summer camp USA... so for just a few months it didn't really seem worth it.
I graduated last summer and have found it excruciatingly difficult to find grad level work related to my degree. This past year has been so depressing, and on my 23rd birthday I made the decision to apply for the visa because I figured if all I could get here in the UK was minimum wage type work, I might as well go abroad and do exactly that whilst having a lot more fun *nods*
